Am I the only one who thinks Thanksgiving doesn’t get enough love? I mean, a holiday about spending time with friends and family—all centered around EATING! Hello! It’s one of my top favorite holidays for that reason.
This year, I want to share one of my family’s favorite (and most popular) side dishes with all of you.

- Do you love macaroni and cheese?
Well, if you do, then I have the perfect side dish for you. If corn and mac and cheese had a baby, it would be “Creamy Cheesy Corn Casserole.” If you love an inexpensive, creamy, and decadent dish, try out this recipe with your friends and family this year.
Creamy Cheesy Corn Casserole

Total Time: 30 minutes
Servings: 8-10 servings
Ingredients
- 1 (8-ounce) package cream cheese, cubed and at room temperature
- 4 tablespoons butter, salted OR unsalted
- ⅓ cup milk
- ½ teaspoon salt
- Freshly ground black pepper, to taste
- 1/2 teaspoon of smoked paprika (optional)
- If you like a bit of heat 1/4 teaspoon of cayenne pepper (optional)
- 1 (18-ounce) bag frozen sweet corn, thawed
- 1 cup shredded sharp cheddar cheese
Instructions
- Preheat oven to 350°F. In a medium pot set over low heat, melt cream cheese and butter. Stir in milk until mixture is smooth and creamy. Stir in salt, pepper, smoked paprika, cayenne pepper, and corn.
- Pour corn mixture into an 8- by 8-inch square (or 2-quart) baking dish. Sprinkle with grated cheddar. Bake for 20 minutes or until golden and bubbly.

Fall holidays also bring a slew of traditions. It got me thinking about our family traditions and what others might do during the holidays. For us, after the Thanksgiving meal is done and bellies are full, our family sits around the television and ushers in the Christmas holiday with a screening of National Lampoon’s Christmas Vacation. It’s a staple and always fills me with holiday spirit.
